A fresh, crunchy, and creamy summer salad with roasted beets, salty feta, and crisp cucumbers in a tangy dressing.

Ingredients

3 medium beets, roasted and diced

2 Persian cucumbers, thinly sliced

1/2 cup feta cheese, crumbled

2 tbsp olive oil

1 tbsp red wine vinegar or lemon juice

1 tsp Dijon mustard

1 tsp honey

Salt and pepper to taste

Fresh dill or mint for garnish

Instructions

1. Roast or boil the beets until tender, then peel and dice.

2. Salt the sliced cucumbers and let them sit for 10 minutes. Pat dry.

3. In a bowl, whisk olive oil, vinegar or lemon, Dijon, and honey.

4. Toss beets, cucumbers, and feta in a large bowl.

5. Pour the dressing over and toss gently.

6. Garnish with herbs and serve chilled.

Notes

For a protein boost, add chickpeas or grilled chicken.

Use pre-cooked beets to save time.

Let the salad chill for 10–15 minutes before serving.
