Potato Croquettes

  • 500 g russet potatoes
  • 30 g butter
  • 1 egg yolk
  • 2 g garlic powder
  • 4 g salt
  • 2 g black pepper
  • 120 g flour
  • 2 eggs, beaten
  • 120 g panko breadcrumbs
  • Oil for frying

Beef Tataki

  • 250 g halal beef tenderloin
  • 15 ml sesame oil
  • 3 g salt
  • 2 g cracked black pepper
  • 5 ml soy sauce
  • 5 ml honey

Avocado Crémeux

  • 180 g ripe avocado
  • 30 g crème fraîche
  • 5 ml lime juice
  • 2 g salt

Miso Aioli

  • 45 g mayonnaise
  • 5 g white miso paste
  • 5 ml lemon juice

Garnish

 

  • Chopped chives
  • Crispy shallots
  • Edible pink flowers
  • Micro herbs

Instructions

1. Prepare the Potato Filling

Boil potatoes until fork tender. Drain and mash while warm with butter, egg yolk, garlic powder, salt, and pepper. Chill for 20 minutes.

2. Shape the Croquettes

Form thick potato rounds. Coat in flour, beaten egg, and panko breadcrumbs. Chill briefly before frying.

3. Fry Until Crisp

Heat oil to 180°C. Fry croquettes until deeply golden and crisp. Drain on paper towels.

4. Prepare the Beef Tataki

Season beef with salt and pepper. Sear in hot sesame oil for 45 seconds per side. Brush with soy sauce and honey glaze. Rest for 3 minutes, then slice thinly.

5. Make the Avocado Crémeux

Blend avocado, crème fraîche, lime juice, and salt until smooth.

6. Prepare the Miso Aioli

Mix mayonnaise, white miso paste, and lemon juice until creamy.

7. Plate the Dish

 

Pipe miso aioli onto plate. Add Crispy Potato Croquette in center, top with avocado crémeux and sliced beef tataki. Finish with chives, crispy shallots, micro herbs, and edible flowers.

Notes

  • Chill croquettes before frying for cleaner shape.
