Lavender Vanilla Panna Cotta

  • 480 g heavy cream
  • 240 g whole milk
  • 80 g granulated sugar
  • 5 g vanilla bean paste
  • 2 g culinary lavender
  • 7 g gelatin powder
  • 45 g cold water
  • Natural purple coloring, optional

Blueberry Compote

  • 150 g blueberries
  • 25 g granulated sugar
  • 15 g lemon juice
  • 30 g water

Almond Crumble

  • 80 g almond flour
  • 40 g unsalted butter
  • 40 g brown sugar
  • 1 g salt

Garnish

 

  • Fresh mint leaves
  • Edible yellow flowers
  • Powdered sugar
  • Extra blueberries

Instructions

1. Bloom the Gelatin

Mix gelatin powder with cold water in a small bowl. Let sit for 5 minutes until soft.

2. Infuse the Cream

In a saucepan, combine heavy cream, milk, sugar, vanilla bean paste, and culinary lavender. Warm gently over medium-low heat for 5 minutes. Strain to remove lavender.

3. Finish the Panna Cotta

Stir bloomed gelatin into the warm cream mixture until dissolved. Add natural purple coloring if using. Pour into silicone molds or ramekins and refrigerate for at least 4 hours.

4. Prepare the Blueberry Compote

Combine blueberries, sugar, lemon juice, and water in a saucepan. Simmer for 8 minutes until glossy and slightly thickened. Cool completely.

5. Prepare the Almond Crumble

Preheat oven to 170°C. Mix almond flour, butter, brown sugar, and salt until crumbly. Spread on a baking tray and bake for 12–15 minutes until golden.

6. Plate the Dessert

 

Spoon blueberry compote onto serving plates. Unmold Lavender Vanilla Panna Cotta carefully in the center. Scatter almond crumble around the plate. Garnish with fresh mint, blueberries, edible flowers, and powdered sugar.
