Lemon Ricotta Mezzi Rigatoni: Bright, Creamy, and Easy Weeknight Comfort

A bright, creamy, and citrusy pasta made with fresh lemon, ricotta, and mezzi rigatoni perfect for busy weeknights or slow weekend dinners.

Ingredients

8 oz mezzi rigatoni

1 cup whole milk ricotta

1 lemon (zest and juice)

2 cloves garlic, minced

1/4 cup grated parmesan

Salt and pepper to taste

2 tbsp pasta water (reserved)

Fresh basil or mint for garnish

Instructions

1. Boil a large pot of salted water and cook mezzi rigatoni until al dente.

2. While pasta cooks, mix ricotta, lemon zest, lemon juice, garlic, and parmesan in a bowl.

3. Reserve 1/2 cup of pasta water before draining pasta.

4. Toss hot pasta into ricotta mixture and stir well.

5. Add pasta water a tablespoon at a time until sauce is creamy and coats pasta.

6. Season with salt and pepper.

7. Serve warm, topped with herbs and extra lemon zest.

Notes

Use full-fat ricotta for best texture.

Add red pepper flakes or toasted breadcrumbs for extra flavor.

Pairs well with white wine or arugula salad.
