For the Cod

  • 4 fresh cod fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 1 teaspoon smoked paprika
  • Zest of 1 lemon

For the Tomato–Olive Ragout

  • 2 tablespoons olive oil
  • 1 small yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cups cherry tomatoes, halved
  • ½ cup pitted Kalamata olives, sliced
  • 1 tablespoon capers, drained
  • ¼ teaspoon chili flakes (optional)
  • ¼ cup white wine or vegetable broth
  • 1 tablespoon fresh parsley, chopped

For the Saffron Cream

  • ½ cup heavy cream
  • ¼ cup fish or vegetable stock
  • A pinch of saffron threads
  • 1 tablespoon butter
  • Salt to taste

Instructions

  • Prepare the Cod:
    Pat cod fillets dry and season with salt, pepper, smoked paprika, and lemon zest. Heat olive oil in a skillet and sear cod 3–4 minutes per side until golden. Remove and keep warm.
  • Make the Ragout:
    In the same pan, sauté onion in olive oil until translucent. Add garlic, tomatoes, olives, and capers. Pour in wine and simmer until thickened, about 8 minutes. Stir in parsley and set aside.
  • Infuse the Saffron Cream:
    Warm stock in a small saucepan and add saffron. Steep for 5 minutes, then whisk in cream and butter. Simmer gently until golden and slightly reduced.
  • Combine and Serve:
    Return cod to the skillet. Spoon over saffron cream and let everything meld for 2 minutes. Serve immediately with extra sauce and lemon zest.

Notes

  • For a dairy-free version, use coconut milk instead of cream and skip the butter.
  • Substitute halibut, sea bass, or haddock if cod isn’t available.
  • Use ripe cherry tomatoes for the richest flavor.
