For the Tartlet Shells

  • 1 sheet puff pastry, thawed but cold
  • 1 egg, lightly beaten

For the Caramelized Onions

  • 3 large yellow onions, thinly sliced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp brown sugar
  • Pinch of salt
  • 1 tsp balsamic vinegar (optional)

For the Blue Cheese Mousse

  • 4 oz blue cheese, crumbled
  • ½ cup heavy cream
  • 3 oz cream cheese, softened
  • ½ tsp lemon juice

For the Walnut Soil

  • ½ cup walnuts
  • 1 tbsp butter
  • Pinch of sea salt

Garnish

  • Fresh thyme leaves or microgreens

Instructions

  1. Prepare the Tartlet Shells Preheat oven to 375°F (190°C). Cut circles from puff pastry and press into a mini muffin pan. Prick the base with a fork, brush with egg, and bake 10–12 minutes until golden. Cool completely.
  2. Caramelize the Onions Melt butter and olive oil in a skillet over medium-low heat. Add onions and salt; cook slowly, stirring often, 25–30 minutes until golden. Stir in brown sugar and balsamic vinegar, then cool slightly.
  3. Make the Blue Cheese Mousse Blend blue cheese, cream cheese, and lemon juice until smooth. Whip heavy cream to soft peaks, fold gently into the cheese mixture, and chill for 30 minutes.
  4. Prepare the Walnut Soil Toast walnuts in butter for 3 minutes, cool, and pulse into coarse crumbs. Sprinkle with a pinch of salt.
  5. Assemble Spoon caramelized onions into pastry shells, top with blue cheese mousse, and finish with walnut soil and thyme leaves or microgreens. Serve immediately.
