Ingredients

For the Tartlet Shells:

200 g all-butter puff pastry (or shortcrust pastry)

1 egg yolk, beaten (for egg wash)

For the Pumpkin Filling:

300 g pumpkin purée (roasted and blended smooth)

1 egg

100 ml cream

40 g Parmesan cheese, grated

Salt and freshly ground black pepper

Pinch of nutmeg

For the Topping:

120 g soft goat cheese

3 tablespoons honey

2 sprigs fresh thyme

Instructions

1. Preheat oven to 190°C (375°F).

2. Roll out pastry and cut into rounds to fit mini tartlet molds or muffin tins.

3. Press pastry into molds, prick bases with a fork, and brush edges with egg wash.

4. Bake blind for 10 minutes, then remove weights and bake another 5 minutes until lightly golden.

5. Mix pumpkin purée with egg, cream, Parmesan, nutmeg, salt, and pepper until smooth.

6. Spoon mixture into pre-baked tartlet shells.

7. Bake for 15 minutes, until set but still slightly soft in the center.

8. Warm honey gently with thyme sprigs in a small saucepan.

9. Allow to infuse for 5–10 minutes, then remove thyme.

10. Top each tartlet with a dollop of soft goat cheese.

11. Drizzle with thyme-infused honey.

12. Garnish with a small thyme leaf if desired.

Notes

Make ahead: Bake shells and filling one day before, then finish with goat cheese and honey before serving.

For a gluten-free option, use almond flour crusts.

Swap honey for maple syrup for a vegan variation.
