Ingredients

8 oz mezzi rigatoni

1 cup whole milk ricotta cheese

1 lemon, zested and juiced

2 tbsp olive oil

1 garlic clove, minced

Salt and black pepper, to taste

½ cup reserved pasta water

Chopped parsley or basil (optional)

Instructions

1. Boil mezzi rigatoni in salted water until al dente. Reserve ½ cup pasta water.

2. In a pan, warm olive oil and sauté garlic until fragrant.

3. Turn off heat. Stir in ricotta, lemon zest, and a splash of pasta water.

4. Season with salt and pepper. Add lemon juice to taste.

5. Toss in the drained pasta, adding more pasta water as needed to create a creamy sauce.

6. Serve warm with fresh herbs if desired.

Notes

Use whole milk ricotta for best texture.

Don’t skip the lemon zest—it adds brightness!

Add peas, spinach, or grilled chicken for variation.
