Vegan Birria Tacos: Bold, Cheesy & Totally Meat-Free Recipe

Bold, comforting, and completely meat-free, these vegan birria tacos are stuffed with shredded jackfruit and mushrooms, slow-simmered in a rich, chili-infused broth. Perfectly crispy on the outside and melty on the inside, they’re dunkable, dippable, and totally crave-worthy.

Ingredients

2 tablespoons oil

1 small onion, chopped

4 garlic cloves, minced

2 dried guajillo peppers, deseeded

2 dried ancho peppers, deseeded

1 teaspoon cumin

1 teaspoon smoked paprika

1/4 teaspoon cinnamon

1 tablespoon tomato paste

1 tablespoon tamari or soy sauce

1 tablespoon apple cider vinegar

1 cup vegetable broth

1 can young jackfruit (in brine), drained and shredded

1 cup mushrooms, sliced (shiitake or oyster preferred)

Corn tortillas

1 cup vegan cheese (Violife, Chao, or Miyoko’s)

Salt to taste

Instructions

1. Toast the dried peppers in a skillet until fragrant, then soak in hot water for 10 minutes.

2. Meanwhile, sauté onion and garlic in oil until golden.

3. Blend soaked peppers with onion, garlic, tomato paste, tamari, vinegar, cumin, cinnamon, and vegetable broth until smooth.

4. Simmer the sauce on low for 15–20 minutes to develop flavor.

5. In a pan, cook the jackfruit and mushrooms with a bit of the sauce until tender and caramelized.

6. Dip corn tortillas in consommé, then fill with the jackfruit mix and vegan cheese. Fold and pan-fry until crispy on both sides.

7. Serve hot with a side of consommé for dipping, and your favorite toppings like pickled onions or cilantro.

Notes

Make the consommé a day ahead for deeper flavor.

Jackfruit can be swapped for seared tofu or tempeh if preferred.

Use vegan block cheese and shred it fresh for better melting.
