This zucchini sandwich is simple, fresh, and packed with grilled flavor. Perfect for lunch or a light dinner, it layers seasoned zucchini with creamy spreads and crunchy veggies.

Ingredients

1 medium zucchini, sliced

1 tbsp olive oil

Salt and black pepper to taste

1/2 tsp garlic powder

2 slices sourdough or multigrain bread

2 tbsp hummus or goat cheese

1/4 avocado, sliced

Tomato slices

Fresh greens (arugula or spinach)

Instructions

1. Slice the zucchini into ¼-inch thick pieces.

2. Sprinkle with salt and let rest for 10 minutes.

3. Pat dry, season with garlic powder and pepper.

4. Grill or pan-sear zucchini until golden on both sides.

5. Toast the bread if desired.

6. Spread hummus or goat cheese on each slice.

7. Layer grilled zucchini, avocado, tomato, and greens.

8. Close the sandwich, press lightly, and slice to serve.

Notes

You can roast zucchini in the oven at 400°F for 20 minutes if grilling isn’t an option.

For a vegan version, use hummus or cashew cheese.

Serve warm or cold depending on preference.
